Pan-fried Black Tiger prawns with chimichurri dressing

Ingredients

  • Large Black Tiger prawns, shell on
  • 30 ml cooking oil
Chimichurri dressing. Mix the following:
  • 20g chopped coriander
  • 20 g chopped parsley
  • 4 cloves of garlic, minced
  • 1 shallot, finely chopped
  • 1 green chilli, diced
  • 1 teaspoon chilli flakes
  • 10 ml white wine vinegar
  • Juice of half a lemon
  • 100 ml olive oil
  • Salt and pepper

Tips: Don't cook them for too long: prawns should take on a “C” shape, not a tight “O”. Water creates a soft steam, preventing them from becoming tough.

Preparation steps

Heat the oil in a pan over medium-high heat.

Add the prawns and fry for 2 minutes on the first side.

Turn them over and add 50 ml of water to steam them for 3 minutes, until pink and firm.

Let rest for 1 minute and serve with chimichurri spooned over the top.
