Ingredients

Ingredients for the scallops:
  • 6 large scallops (10/20), dried
  • 30 ml neutral oil (rapeseed or sunflower oil)
  • 20 g garlic butter
Ingredients for garlic butter:
  • 100 g salted butter,
  • 50 g garlic puree
  • 1 teaspoon of black pepper
  • 20 g chopped parsley

Tips: Ensure the scallops are dry for good caramelisation. Serve immediately to maintain tenderness.

Preparation steps

Heat the oil in a pan over medium-high heat until it shimmers.

Add the scallops and cook for 3 minutes without moving them until they have a golden-brown crust.

Flip them, add the garlic butter and baste continuously for 2 minutes.

Remove from heat and let stand for 1 minute before serving.
